How to Cook Millet and Vegetable Pilaf Recipe

Ingredients

Serves 4
250 g/9 oz millet
Salt and freshly ground black pepper
30 ml/2 tbsp oil
2 leeks, trimmed and thinly sliced
1 large carrot, coarsely grated
250 g/8 oz caurgettes, diced
5 ml/1 tsp grated fresh ginger root
50 – 125 g/2 – 4 raisins

Preparation method

1. Put the millet into a medium-sized saucepan with 600 ml/1 pt water and 2.5 ml/ ½ tsp salt, bring to the boil, then put a lid on the saucepan, turn the heat down and leave to cook gently for 20 minutes, when the millet should be tender and all the water absorbed.
2. Remove the saucepan from the heat and leave on one side, keeping it covered to allow the millet to steam, for a further 5 – 10 minutes.
3. Meanwhile, heat the oil in a frying-pan and fry the leeks, carrot and caurgettes for 5 minutes, until they are beginning to soften, then stir in the ginger root and cook for a further 2 minutes.
4. Using a fork, gently mix the vegetables with the millet and add the raisins. Season to taste. Cook for a further 2 – 3 minutes to heat through, then serve.

How to make Iced Fudge Mousse Recipe

Ingredients

Serves 6
150 g/5 oz soft dark brown sugar
25 g/1 oz butter
4 egg yolks
5 ml/1 tsp vanilla essence
225 ml/8 fl oz thick cream
Fresh Strawberries or other fruits

Preparation method

1. In a thick-based saucepan, heat the sugar and butter over a moderate heat until the sugar has dissolved in the butter. Boil stirring, for 1-2 minutes, then stir in 100 ml/4 fl oz water. Cook without stirring until the mixture is thick and smooth.
2. In a small heat-proof bowl, beat the egg yolk until well blended. Stir in the sugar mixture. Put the bowl over a pan of simmering water and beat vigorously until the mixture is light and fluffy. Cool.
3. Add the vanilla essence to the cream and whip until thick. Fold this into the cooled sugar mixture and pour into a freezer proof mould. Cover, label and freeze.
4. About 30 minutes before it is needed, unmould the mousse on to a plate and decorate with slices of fresh strawberries or canned fruit. Enjoy Iced Fudge Mousse.

Cold sabayon cream

Ingredients
Serves for 4
6 large egg yolk
60 ml/4 tbsp sugar
90 ml/6 tbsp Marsala
7.5 ml/1 ½ tsp orange zest, finely grated
150 ml/5 fl oz thick cream, whipped
1 large orange

Preparation method

1. In the top pan of a double boiler, combine the egg yolks, sugar and Marsala. Whisk the mixture over hot, but not boiling, water for about 10-15 minutes, until the mixture thickens and increase in volume. Remove the top pan from the heat.
2. Put 22 ml/1 ½ tbsp cold water in a small bowl and sprinkle the gelatin over it. Leave for 1 – 2 minutes to soften. Place the bowl in a small saucepan of hot water and heat until the gelatin is completely dissolved. Remove the bowl from the saucepan and allow to cool slightly.
3. Stir the dissolved gelatin into the egg yolk mixture.
4. Stand the top pan of the double boiler in a bowl of ice cubes and stir the sabayon continuously until it begins to set. Remove the pan from the ice.
5. With a large metal spoon, fold the brandy, grated orange zest and whipped cream into the sabayon. Pour into champagne glasses and chill.
6. Pipe a rosette of whipped cream in the centre of each sabayon. Cut across the orange to make 4 thin slices, then cut from the centre to the side, twist and place the rosettes.

700 g small Brussels sprout
Salt, freshly ground black pepper
30 ml melted butter

Preparation method

1. Cut a slice from the base Brussels sprout and remove the tough outer leaves entirely. Nick small crosses in the base of each sprout. As this the thickest part of the sprout, it is also the slowest to cook. The crass lets in the hot water and helps the sprouts to cook evenly.
2. Soak the sprouts in cold water with a little salt for 15 minutes. Drain well.
3. Bring a large saucepan of salted water to the boil. Drop the sprouts into the boiling water and simmer, uncovered, for 5 minutes. Cover the pan and continue to cook for 2 – 10 minutes, depending on their age, until the sprouts are tender but still crisp.
4. Drain the sprouts well, then return them to the pan and season generously with salt and freshly ground black pepper. Add the melted butter and lemon juice to taste, and toss lightly. Transfer to a heated serving dish and serve immediately.

Serves 4
8 thin crêpes, 12.5 cm/5 in diameter
125 g/4 oz cream cheese
150 ml/5 fl oz soured cream
90 ml/6 tbsp thick cream
1.5 ml/ ¼ tsp cayenne pepper
Salt and freshly ground black pepper
8 very thin slices cooked ham
45 ml/3 tbsp fresh grated Gruyere cheese
Finely chopped parsley to garnish

Preparation method

1. In a bowl, combine the cream cheese with the soured cream, beating with a wooden spoon until smooth. Gradually beat in the thick cream and season with cayenne pepper, salt and freshly ground black pepper to taste. Chill.
2. Heat the grill to high.
3. Lay the crêpes out on a flat surface and spread evenly with 1/3 of the mixture. Cover each crêpes with a slice of ham and spread with half of the remaining cream mixture.
4. Roll up each crêpe tightly and arrange side by side in a shallow flameproof dish, with the seams underneath.
5. Spread the remaining cream mixture over the top and sprinkle with grated Gruyere cheese.
6. Grill for 4-5 minutes, or until the crêpes are warmed through and golden brown on top. Sprinkle with finely chopped parsley and serve immediately.

How to Make Burnt Honey Ice Cream Recipe

Ingredients
225 g sugar.
600 ml pt milk
8 large egg yolks cracked ice for chilling.

225 g sugar
120 ml clear honey.

Preparation method;

 Step 1
To make the rich custard, combine the sugar, milk and thick cream in a saucepan and bring to the boil. Remove the pan from the heat, cover and leave for 5-10 minutes.
Step 2
In the top pan of a double boiler, off the heat, beat the egg yolks. Gradually pour in the hot milk, stirring with a wooden spoon until the mixture is well blended and foamy.
Step 3
 Put the pan onto the boiler containing simmering water and cook, stirring continually until the custard  coats the back of a spoon. Do not let the custard come to the boil or will curdle.
Step 4
Pour the rich custard into a large bowl and set in a larger bowl filled with cracked ice, cover the smaller bowl with a plate and let the custard cool completely.
Step 5 
To make the burnt honey  sauce in a small saucepan bring the sugar and 60 ml/4 tbsp water to the boil. Add another 60 ml water (covering your hand with as you add it to avoid being splashed). Blend with a wooden spoon and cook for a further 1-2 minutes until the syrup reaches 115/240 F ; at  this temperature a small sample dropped in cold water will form a soft ball. Stir in the clear honey; remove from the heat and allow to cool.
Step 6
Stir half the cooled burnt honey sauce into the cooled custard and chill, covered, for 2 hours. Transfer the custard to a freezer proof container and put in the freezer until the mixture being to harden to a depth of about 25 mm/1 in around the side of the container, about 1-2 hours. Remove the mixture and beat with a whisk, or fork, return to the freezer and leave until firmly frozen, 2-3 hours.
Step 7
About 1 hour before serving, transfer the ice cream to the refrigerator to soften. 
Step 8
To serve, pile the ice cream high in a glass serving dish and trickle over the remaining burnt honey sauce. Serve immediately.
