French Ham Crepes Recipe

Ingredients

Serves 4
8 thin crêpes, 12.5 cm/5 in diameter
125 g/4 oz cream cheese
150 ml/5 fl oz soured cream
90 ml/6 tbsp thick cream
1.5 ml/ ¼ tsp cayenne pepper
Salt and freshly ground black pepper
8 very thin slices cooked ham
45 ml/3 tbsp fresh grated Gruyere cheese
Finely chopped parsley to garnish

Preparation method

1. In a bowl, combine the cream cheese with the soured cream, beating with a wooden spoon until smooth. Gradually beat in the thick cream and season with cayenne pepper, salt and freshly ground black pepper to taste. Chill.
2. Heat the grill to high.
3. Lay the crêpes out on a flat surface and spread evenly with 1/3 of the mixture. Cover each crêpes with a slice of ham and spread with half of the remaining cream mixture.
4. Roll up each crêpe tightly and arrange side by side in a shallow flameproof dish, with the seams underneath.
5. Spread the remaining cream mixture over the top and sprinkle with grated Gruyere cheese.
6. Grill for 4-5 minutes, or until the crêpes are warmed through and golden brown on top. Sprinkle with finely chopped parsley and serve immediately.

Burnt Honey Ice Cream Recipe

How to Make Burnt Honey Ice Cream Recipe

Ingredients
225 g sugar.
600 ml pt milk
8 large egg yolks cracked ice for chilling.
for the burnt honey sauce
225 g sugar
120 ml clear honey.

Preparation method;

 Step 1
To make the rich custard, combine the sugar, milk and thick cream in a saucepan and bring to the boil. Remove the pan from the heat, cover and leave for 5-10 minutes.
Step 2
In the top pan of a double boiler, off the heat, beat the egg yolks. Gradually pour in the hot milk, stirring with a wooden spoon until the mixture is well blended and foamy.
Step 3
 Put the pan onto the boiler containing simmering water and cook, stirring continually until the custard  coats the back of a spoon. Do not let the custard come to the boil or will curdle.
Step 4
Pour the rich custard into a large bowl and set in a larger bowl filled with cracked ice, cover the smaller bowl with a plate and let the custard cool completely.
Step 5 
To make the burnt honey  sauce in a small saucepan bring the sugar and 60 ml/4 tbsp water to the boil. Add another 60 ml water (covering your hand with as you add it to avoid being splashed). Blend with a wooden spoon and cook for a further 1-2 minutes until the syrup reaches 115/240 F ; at  this temperature a small sample dropped in cold water will form a soft ball. Stir in the clear honey; remove from the heat and allow to cool.
Step 6
Stir half the cooled burnt honey sauce into the cooled custard and chill, covered, for 2 hours. Transfer the custard to a freezer proof container and put in the freezer until the mixture being to harden to a depth of about 25 mm/1 in around the side of the container, about 1-2 hours. Remove the mixture and beat with a whisk, or fork, return to the freezer and leave until firmly frozen, 2-3 hours.
Step 7
About 1 hour before serving, transfer the ice cream to the refrigerator to soften. 
Step 8
To serve, pile the ice cream high in a glass serving dish and trickle over the remaining burnt honey sauce. Serve immediately.

How to make Cold Almond Souffle Recipe

Cold almond soufflé is an elegant dessert for a birthday or other celebration. The Danes use almonds in many of their desserts.

Ingredients

200 g/7 oz almonds
200 g/7 oz sugar
9 medium-sized egg whites
Butter for greasing
100 g/4 oz milk chocolate cut into small pieces
Fresh fruit salad to serve
Vanilla ice cream, softened, or Cultured cream
For decoration
Walnut halves
Blanched almonds
Marzipan leaves or crystallized violets
Chopped hazelnuts, toasted

Preparation method

1. Heat the oven to 200C/400F/ gas 6. Stir the ground almonds, sugar and 3 of the egg whites in a saucepan over low heat until the mixture is slightly brown. Remove from the heat and allow the mixture to cool.
2. Whisk the remaining egg whites until stiff but not dry and fold them into the almond mixture.
3. Generously butter a 1.1 L/2 pt savarin mould and spoon in the mixture. Put the mould in a baking tin and fill the tin with warm water to come one-third up the savarin mould. Bake for 30 minutes.
4. Remove the souffle from the oven, cool it for 10 minutes and turn it out on to a serving dish. Allow the soufflé to cool for 2 hours, cover and refrigerate overnight.
5. The next day, melt the chocolate pieces, in a bowl or pan over hot water. When melted, spread the chocolate over the soufflé with a palette knife.
6. Decorate the cold almond souffle with walnut halves, blanched almonds and marzipan leaves, or crystallized violets, and toasted hazelnuts.
7. Serve the soufflé with fresh fruit salad in the centre and with the vanilla ice cream or Cultured cream

How to Make Enriched White Bread Recipe

Ingredients
Make 2 plaits or 12 roll
450/1lb strong plain white flour
1 tsp salt
15 g/ ½ oz fresh yeast or
7 g/ ¼ oz dried yeast
1 tsp sugar
250 ml/8 fl oz warm milk
50 g/2 oz butter, softened
1 egg, beaten
Egg wash
1 egg, 1 tbsp water, 1 tsp sugar

Preparation method

1. Weigh out 100 g/4 oz flour and keep on one side. Sieve the remaining flour and salt into a bowl. Add the fresh or dried yeast to the sugar, lukewarm milk and reserved flour and mix well to form a batter. Leave to stand for about 20 minutes in a warm place until frothing vigorously. Add to the flour with the butter and beaten egg, and mix well. The dough will be quite soft. Turn on to a lightly floured board and knead for 10 minutes or 2 – 3 minutes with a dough hook on an electric mixer. Form into a ball and put into a bowl. Cover and leave to prove for 45 minutes.
2. Heat the oven to 190 C/375 F/gas 5.
3. Knead the dough again and shape into two plaits or 12 rolls. Place on a lightly greased baking sheet. Make the egg wash by beating the egg with the water and sugar. Brush all over the surface of the dough. Cover and prove for 30 minutes. Bake loaves for 45 minutes, or rolls for 15 minutes, until the base sound hollow when tapped. Cool on wire rack.

How to Make Chicken Lasagna Recipe with Mushrooms

Ingredients
Serves 4
350 g /12 oz chicken
10-12 sheets / 175 g/6 oz lasagna
 3 ¼ cups 900 ml boiling water
2 tsp oil
3 tbs / 40 g butter
1 onion, chopped
1 clove garlic, chopped
2 cups/ 100 g/ oz mushrooms, sliced
1 tsp dried basil
6 tbs / 40g flour
450 ml/ 3/4 pint milk 1 chicken stock (bouillon) cube
 salt, freshly ground black pepper
 40 g/1 1/t oz Edam cheese, grated
 spring of fresh basil

Chicken lasagna preparation method

1. Place chicken in a shallow dish. Cover and cook for 7 minutes, turning once. Allow standing, covered, for 4 minutes. Remove skin and bones and chop meat.
2. Place the lasagna in a large oblong dish. Cover completely with water and add salt and oil. Cover and cook for 10 minutes. Allow standing, covered, for 15 minutes. Drain and lay out on a clean tea towel.
3. Place butter in a bowl and cook for 1 minute. Stir in onion, garlic, mushrooms and thyme and cook for 2 minutes.
 4. Stir in the flour and gradually add the milk, stirring. Crumble in the chicken stock (bouillon) cube. Cook for 4 minutes.
5. Stir in the chicken and season with pepper. Cook for 3 minutes.
6. Layer the lasagna and chicken sauce in the casserole dish, staring with a layer of lasagne and ending with a layer of sauce. Top with grated cheese. Cook for 1 - 2 minutes.
7. Brown the lasagna under the grill (broiler) and garnish with springs of fresh basil.

1 large onion, chopped 
3 cloves garlic, chopped 
1 tbs olive oil 
1 cup / 225 g long-grain rice 
a few strands of saffron or 1 tsp turmeric 
750 ml/ 1 1/4 pint hot chicken stock 
salt/ freshly ground black pepper 
100 g/4 oz frozen peas 
150 g/ 6 oz cooked prawns or shrimps, shelled 
175 g/ 6 oz cooked mussels 
175 g/ 6 oz cooked clams 
100 g/ 4 oz cooked chicken, cut into bite-sized pieces 
Lemon wedges 

How to make paella recipe?

 1. Place onion and garlic in a large bowl, pour over oil, stir, cover and cook for 3 minutes. 
2. Stir in rice, saffron or turmeric, chicken stock and seasoning. Cover and cook for 10 minutes, stirring twice. Set aside.
 3. Place peas in a bowl, cover and cook for 3 minutes. Reserving some seafood in shells to garnish, stir in prawns or shrimps, mussels, clams and chicken, cover and cook for 6 minutes. 
4. Drain. Stir into rice and garnish with remaining seafood and lemon wedges.
